We live in Shrimp Country here on the Gulf Coast. Just by reading your recipe I can tell this is another winner. Thank you for sending it to me. I'm sitting on 80 or so Crappie Fillets and this will be a perfect companion to the Baked Crab Potato Chip Crusted Crappie we will be eating.
Yes, UTZ Chesapeake Crab Chip is the Bomb for a Fish Drudge. I roll an entire bag in a gallon Zip-Loc using a rolling pin. I have food processed the chips but it didn't do any better job than the Rolling Pin. Quite a bit of the oil in the chips transfers to the bag helping to reduce the total fats.
I should add that I bake my fish on a wire rack resting inside a cookie sheet when coating with the UTZ Chips. It's baked best for the big Slab Fillets at 350 degrees for 25-30 minutes no fan running. I may have a picture if you want.
