Happy Wednesday. I have a few recipes to keep you cooking the rest of the week.
I am very excited about this baked chicken with mushrooms and tomatoes! There’s something so comforting about it. Since I had leftover arugula pesto, I made more arugula pesto pasta to serve with this chicken. It was a perfect dinner!
Tonight, I’m in the mood for soba, so I’m making a Thai basil pork soba soup kinda situation. I’ll let you know how it turns out!
Let’s get into the recipes.
NEW RECIPE
Baked Chicken with Mushrooms and Tomatoes
A simple, spicy baked chicken dish with mushrooms and tomatoes is perfect paired with pasta, rice, risotto, or roasted vegetables.
READER FAVES
Air Fryer Lemon Pepper Chicken Tenders
Thank you so much for the 5-star review! Woo! I almost forgot that having free will means I can make these chicken tenders any day of the week…might be my go-to for tomorrow!
Sour Cream and Onion Chicken Meatballs
Thank you, Marie! Thrilled to hear this was a hit with everyone! These meatballs are so comforting and perfect with egg noodles. YUM!
A FEW MORE IDEAS
It’s going to be so rainy and icky the rest of the week, so I definitely have soups and stews on my mind!
Beef Barley Stew
This beef barley stew recipe epitomizes comfort. It’s a thick, velvety, stick-to-your-ribs stew that may–and I mean this in the best way possible–send you straight to Snoozeville after you eat it.
Turkey Enchilada Soup
This turkey enchilada soup recipe is an easy weeknight recipe with big flavor from just a few ingredients.
Cabbage Ramen with Pork
The pork is coated in a sweet, lightly spicy marinade before being fried and thinly sliced. It’s served with a warming bowl of slurpable ramen in an easy-to-prepare savory broth.
That’s it for this rainy Wednesday! I hope everyone has a great rest of the week. If you make one of my recipes, be sure to drop a comment on the post to let me know how it turns out; I’d love to hear from you. Byeeeeeee! 💖 💖
