Happy Wednesday. Today, I have a few reader faves to inspire your meal plans for the rest of the week.
Midweek Update
This week has been extra busy! My in-laws are coming down this weekend, so lots of cleaning and prepping, and Grammy has been a little sick, so we had to take her back to the vet on Monday. Hopefully she’s on the mend soon!
Last night, I made my fish salpicón—it’s a labor of love but absolutely worth it! I served it with a mango-avocado salsa that I feel like I want to eat on everything!
Earlier in the week, I made a version of my turkey ragù, which is just so perfect for a weeknight meal. I’ll link the recipe below.
I’ll be eating out a lot for the rest of the week, but I have a few recipes in the works right now that I can’t wait to share with you soon. For now, let’s get into some meals you can make the rest of the week.

One of my favorite ways to eat flaky white fish. Crisp, lightly fried fish is flaked into a bright, spicy cilantro-lime mixture that coats each piece of fish perfectly. So delicious on tostadas, served in tortillas, or piled on top of a salad (which is how I had it yesterday).
Easy Turkey Ragù
If you’re looking for a tasty turkey pasta sauce recipe (it takes just under an hour from cutting board to table!), this is the one you need.
Aleppo Pepper Braised Chicken
This Aleppo pepper braised chicken comes together with just a few ingredients in about an hour. It’s easy, tasty, and goes perfectly with mashed potatoes or roasted vegetables.
