Midweek Meals
Happy Wednesday. Today, I have a new recipe, reader faves, and a few from the archive.
WOW. What a week, and it’s only Wednesday. I’ve been cooking very, very simple meals this week because work has been so busy. Like variations of my cheesy chicken quinoa, except with rice and so many tacos! I’ve been obsessed with making this honey-lime red cabbage slaw, and I think I’m going to make it yet again this weekend so that I can share the recipe with you all! It was so heavenly on my cheesy chicken and rice. I also made my banana nut chocolate upside-down cake again (shown above), and an irresistible white peach lemon-ricotta tart, which I’ll be sharing the recipe for soon!
I’m excited to get into some recipes to keep you cooking this week. Let’s dig in.
