Happy Wednesday. Today, I have a new recipe and a few reader faves to share with you to inspire your meal plans for the rest of the week.
Midweek Update
I have been hard at work developing an Upside-Down Carrot Cake recipe, and so many people have been asking me for it! I’m happy to finally share it with you. Admittedly, I will be making it again this evening because I want to see if reducing the heat to 300ºF will help alleviate some of the cracking on top, but I also didn’t want to wait too long to share it since I know we’re getting close to Easter! As-is, the recipe is absolutely wonderful, but for my own ego, I need to try it once more. I hope to never grate another carrot in my life after this. You can watch tonight’s cake flip on my Instagram or TikTok. Or even YouTube! I started a YouTube channel…and I swear I have plans for it! Maybe longer form content one day. 😜
This week will be busy, as we are going to Rochester for the weekend, and I am trying to test a few new cake recipes before I go. I’m working on a black sesame and blackberry upside-down cake that’s absolutely divine, and I have an idea for a peanut butter and jelly cake with roasted grapes. Unhinged? Maybe. But I bought the grapes, so I’m in too deep now.

Upside-Down Carrot Cake
This has been a HIGHLY anticipated recipe that so many of you have been asking for. An unreal blend of jammy, sweet carrots, a spiced walnut cake, and a layer of decadent cream cheese, this is such a fun homage to carrot cake. Plus, who wouldn’t want to make a cake flip a new Easter tradition? This cake is a labor of love, but one well worth trying!

If you want a similarly laborious Easter project, this Carrot Trifle cannot be beat. Carrot jam, whipped cream, and a wonderful homemade sponge cake. Simply stunning.
