Happy Wednesday. Today, I have a new recipe and reader faves.
Midweek Update
Yesterday, I made one of my favorite midweek meals. Baked BBQ chicken thighs with my harissa mac and cheese (and a side salad). I’ll have to do a recipe for the chicken thighs too; they’re so easy to make and so comforting. Would they be better grilled? Probably. But for a Tuesday night, the oven is just fine by me.
On Sunday, I made stewed lentils that I haven’t been able to stop thinking about either. I’ll be sharing that as an early access recipe soon. Green lentils, lots of carrots, celery, cumin, and a can of hot green chilies (and a few other things). I served it alongside a roasted chicken, and it was just divine.
For now, I have a new recipe plus a few reader faves to keep you cooking the rest of the week.
