Midweek Update
Today, I am happy to share my recipe for the cherry chocolate almond upside-down cake. It’s such a treat! Sweet cherries, decadent amaretto caramel, and an irresistibly crunchy almond base. A perfect way to wrap up summer.
Yesterday, I wanted to make enchiladas, but I think my corn tortillas were no good! I know they can crumble if you don’t heat them up (either in oil or in the microwave), but these crumbled and fell apart before I could even get them out of the package! Unfortunately, this happened after I was 90% done with dinner. I made a quick pivot and just poured my enchilada sauce over the shredded chicken, made a quick pot of rice, and called it an enchilada rice bowl kind of day.
Tomorrow, I’m making my lemon pepper pork chops again, and I can’t wait to share the recipe with you!
