Happy Wednesday. Today, I have new recipes plus reader faves to inspire your dinner (and dessert!) plans for the rest of the week.
Midweek Update
Whew. What a week so far. I can’t believe it’s only Wednesday. Tonight, I’m using the rest of my spicy tomato dip that I made for Galentine’s Day as the base for a sauce with shrimp and pasta. I can’t wait. I’ll also be remaking that tomato dip SOON, so I can share the recipe with you. It makes for such a wonderful party appetizer.
Overall, it’s been a FRUSTRATING past two weeks or so. I tried to have curtain rods installed, and they were all too big, then I ordered a chifforobe that I’ve been looking at for the last year, and it arrived yesterday and was also too big, so I had to send it back. It seems like all my intentions to make updates to my house have been thwarted by my inability to measure things.
I am very excited about this newsletter because I’m finally sharing the recipe for my Raspberry London Fog Upside-Down cake that went viral. Everyone has been asking for the recipe, and I’m so excited that it’s finally ready (after multiple attempts!). It’s such a wonderful spring dessert, and I hope you all love it as much as I do.

NEW RECIPES
Raspberry London Fog Upside-Down Cake
Another day, another “new favorite” upside-down cake. This time, it’s an irresistible combination of Earl Grey tea and lavender to make the London Fog cake base paired with sweet, syrupy raspberries. The finished product is floral, sweet, aromatic, and so perfect for an afternoon tea date at home.
Cheddar Chicken and Broccoli Orzo
This cheddar chicken and broccoli orzo is my new favorite comfort dinner. It’s creamy without being overly decadent, with homemade broth adding savory richness in place of cream or milk.

I made this just a day or two ago, and it always hits the spot. Perfectly crisp fish with the most amazing almond sauce. Delicious with rice pilaf or roasted veggies.
Spicy Shrimp Noodle Soup
For this bowl of spicy shrimp and noodles, I started with a homemade buttery shrimp stock as my base and then layered lots of flavors from ginger, garlic, shichimi togarashi, and sesame oil.
Sweet Chili Tofu
Extra crispy air-fried tofu is tossed with a sweet chili glaze for a perfectly sweet, spicy, and crunchy snack.
