Happy Wednesday. Today, I have reader faves and a few more ideas to inspire your meal plans for the rest of the week.
Midweek Update
Short and sweet, literally! Yesterday, I decided to make my raspberry London fog upside-down cake again (recipe below), and I can’t believe how much I love that one. It’s a labor of love, but so worth the effort. Sweet and tart raspberries swimming in lavender caramel adorn the loveliest Earl Grey and lavender cake. I finish it with a creamy whipped mascarpone and lemon zest to tie everything together. So delicious.

Yesterday, I made my breaded air fryer chicken thighs, and they are always such a hit! So easy to make. I love them on lettuce wraps with a big slice of tomato. I also finally made shrimp fried rice. I did realize that there is a limit to how much shrimp I like in shrimp fried rice. I always feel like more is more, but this was just too much. I regret not breaking out my wok for it, but all things considered, it was tasty!
