Midweek Update
I had a nice New Year’s Eve yesterday! I made my Filet Mignon in Red Wine Mushroom Sauce, which was spectacular! This time, I dry-brined and reverse-seared the filet mignon, and I’ll be sharing the how-to on my site later. I made my classic mashed potato recipe (which I just posted on the site!). Candidly, I skipped the potatoes and ate my Never Fail Rolls (I just posted my recipe, and it’s linked below!). I truly can’t get enough of these rolls, and I’m making another batch as we speak! I bought a nice bottle of champagne, but I went a little too hard on the espresso martinis, so I’ll have to save the bubbly for later 😅 I also ate almost an entire block of cheese by myself. I’d never had it before, but it’s called Istara. It’s a semi-soft, semi-firm cheese from the Basque region of France and holy moly, was it good! It’s a little salty, nutty, and fruity, and I loved it so much!
After we ate, we took a nice walk around the park to enjoy the last few hours of 2024.

Never Fail Rolls
I’m going into 2025 with a goal of becoming a more adept baker, and these rolls are my entry point. They are GOOD, and I plan to iterate more on this simple little recipe in the future. They only require a few ingredients, but they’re so fluffy and soft and perfect for when you want home-baked goodness without a ton of work.
