Midweek Update
This week, I’ve been on a roll with cooking! Yesterday, I made a really fantastic pork tenderloin with chimichurri sauce. I seasoned the pork in aji amarillo powder, cumin, paprika, salt, and then cooked it in the oven with tomatoes, zucchini, and onion. It was perfection in each bite with the bright, herby chimichurri sauce! I had it with mashed potatoes and roasted cauliflower and broccoli. I also have a mini recipe below for my roast turkey that I later turned into Cajun-spiced cheesy rice and vegetables.
For today, I’m sharing a new recipe plus a few reader faves to keep you cooking this week.
MINI RECIPE
On Sunday, I made the most delicious roast turkey breast. I bought a 6-pound, bone-in turkey breast and seasoned it with 2 tablespoons of Slap Ya Mama Cajun Seasoning–inside the cavity and all over the skin–and drizzled it with about a tablespoon or two of extra virgin olive oil. I rubbed that into the skin so it was evenly coated. I just plopped it on a baking sheet fitted with a raised rack and then baked it at 325ºF until the breast reached about 165ºF. Aim for 15 to 20 minutes per pound, so it’ll take anywhere from 1 hour 30 minutes to 2 hours. I let it rest for 20 to 30 minutes before carving it up. I served it with some veggies and a simple warm, mustardy potato salad.
The next day, I diced up the leftover turkey (a little more than half the breast meat was leftover). I also made a pot of white rice (1 cup, according to package instructions). While the rice cooked, I sautéed a red onion, two bell peppers, a jalapeño, and 5 scallions. I added the diced turkey and seasoned again with more Slap Ya Mama Cajun Seasoning. From there, I simply added the cooked rice and a handful of shredded cheese. I did a mix of habanero cheddar and bagged shredded cheese because that’s what I had. I popped it under the broiler for a minute or two to brown the top and fully melt the cheese.
It was excellent! I can’t wait to make it again. So easy and so satisfying!
