Midweek Update
Going to keep this update very short and sweet because I’m running so late on today’s newsletter! This week was so busy. I went to my parents' house to celebrate their anniversary on Sunday, and unfortunately, I ended up in a snowy ditch on the way home. After being towed out, I had to take the car to get the alignment fixed. Argh! But I’m thankful nothing worse happened.
This week, I’ve been cooking a lot! Now that I’m blogging full-time, one of my goals is to take one meal per week to the local community fridge to help serve those facing food insecurity in Baltimore. This week, I made a big batch of lemon-rosemary chicken and rice soup and upside-down cake to load the fridge up with takeaway meals for anyone who needs them.
I’ve also developed two new upside-down cake recipes that I can’t wait to share with you. Let’s get into the recipes!
NEW RECIPES
Lemon-Rosemary Chicken and Rice Soup
Absolutely loved this one. It’s so comforting and perfect for a cold night. No time to make homemade broth? Use a rotisserie chicken and your favorite store-bought chicken stock. Easy peasy!
Shirley Temple Upside-Down Cake
Viral on Instagram and TikTok for good reason. It’s a stunner, and the ginger cake paired with the maraschino cherries absolutely makes it taste like a Shirley Temple in cake form. YUM.
Raspberry Red Velvet Upside-Down Cake
I debated sharing this one just yet, and I may revisit it in the future. While it tastes DELICIOUS, its appearance has received some (funny) criticisms. I may come back to it with the option of a cream cheese frosting, but several people requested the recipe, and who am I if not a woman of the people?
