Midweek Update
I almost wasn’t able to send this newsletter out, but I’m happy to be back home so I can share some reader faves with you.
This week, I had to rearrange my whole meal plan, which has thrown me off-kilter a little bit. Yesterday, though, I made these delicious pork chops with puréed sweet potatoes. I can’t wait to share the recipe with you. I seasoned the chops with beau monde seasoning (one of my favorites, like in this beau monde braised chicken thighs recipe) and served them on top of sweet potatoes puréed with aji amarillo paste and maple syrup. It was savory, spicy, and just a little sweet. They worked so well together!
I’m a little worn out today, and I was thinking of making a kinda-sorta cacio e pepe chicken pasta (similar to my charred broccoli and chicken orzo recipe), but I might actually just treat myself to sushi. I deserve it (I think…)!
