Happy Sunday! This weekend, I’m in Rochester, so I won’t be cooking too much. Before the new week starts, I wanted to send you my favorite meal prep ideas.

The first is one of my favorite recipes I developed years ago for my first cookbook, and it remains one of my favorite recipes for meal prep. You can serve the chicken and tomatoes on just about any carb you like. Try it with mashed or roasted potatoes, white rice, or cooked egg noodles.

Chili is one of the best meal prep meals, and this creamy turkey and white bean chili is one of my favorites. It’s loaded with peppers, beans, and just a nip of cream cheese which adds just the right amount of richness.

Looking for vegan meal prep? These miso-sesame chickpeas are the answer. Throw it together in about 30 minutes and have yourself some savory, comforting chickpeas all week long.
This week, I’m going to try my hand at mushroom stromboli, and I’ll share some process images along the way.
