Happy Sunday. Today, I have lots of things to share with you.
Weekend Update
This weekend was really busy. I’m a little behind on writing posts because I have so many new ideas for things to cook! Unfortunately, I lost a lot of time because we got TWO flat tires on our car when we hit a pothole. Ouch! We had to get towed and everything. Not a great way to spend a Saturday!
Regardless, I made some amazing Mushroom Swiss Chicken Roulades, and I can’t wait to share the recipe with you. They’re based on my Chicken and Goat Cheese Roulades Recipe. YUM! But look at that screenshot above–those are all the recipes in the works right now. Eek! I am slowly but surely working through them, and I’m so excited to share them with you.
I’m especially excited about the Mocha Mousse. That is a recipe I am testing for the Galentine’s Day party I am hosting in February. It is OUTRAGEOUSLY decadent. Loaded with espresso, mascarpone, and dark chocolate and topped with homemade meringues. It’s heaven.
I’m sharing two “new” recipes in this week's newsletter. My goal for 2025 is to revisit my oldest recipes, take new photos, and tweak the recipes. I’ve improved a lot as a photographer and recipe developer, and I’m excited to take the time to improve my archives even further.

“NEW” RECIPES
Shredded Chicken and Chorizo Chili
This is one of the oldest recipes on my site. In fact, I developed it nearly 10 years ago! Can you believe I’ve been blogging for almost 10 years? I sure can’t! This chili is loaded with smoky poblano peppers, spicy chorizo, and lots of spices for a complex, flavorful bowl of goodness.
White Chocolate Mousse
Topped with homemade meringues and macerated raspberries, this white chocolate mousse is the perfect Valentine’s Day dessert.
