Weekend Update
Did you have a good weekend? Mine was pretty relaxing! My Christmas shopping is almost FINISHED, and I cooked a lot! I made chicken roulades yesterday–which tasted AMAZING–but they looked like fleshy skin slugs or naked mole rats, haha. I’ll need to revisit the recipe, so they don’t look so unappetizing. I stuffed them with goat cheese, spinach, and garlic, and I can’t overstate how delicious they are…I need to brown them first. :)
Today, I made short rib lasagna! This is a variation of a short rib lasagna recipe on my site (which I’ll share below). The original recipe is very meaty, so I revisited the recipe only using beef short ribs. I haven’t cut into it yet, but my house smells amazing!
Ideas for Gifting
I’m finalizing all of my Christmas shopping today. I love curating little gift boxes accented with personalized items. Short Rib Lasagna (THE OG)
