Happy Sunday. I can’t believe I have to return to work tomorrow after a week and a half of PTO. Sunday Scaries are at an all-time high right now. For now, I’m destressing on the couch with food, recipe writing, and football. I also decided to pick up my annual-ish book that I’ll likely never finish.
If you follow me on Instagram, then you know I watch a lot of movies. Last month or so, the Criterion Channel had Orson Welles’ adaptation of “The Trial” available, but my husband was adamant that I wait until he read the book. Well, I waited patiently. So patiently, in fact, that the movie left the channel. Since we’d have to pay to watch it online, I figured I might as well read the book now too, and wait patiently (again) for its return to the Criterion Channel. Or maybe I’ll shell out the $2.99 to watch it online.
In the meantime, I have lots of new recipes for you. I mentioned in my previous newsletter that I’d share my sweet chili chicken bowl recipe with you. I’m not lying when I say that I have made this more than seven days in a row for lunch (and once for dinner). It’s so easy to make, and you can mix and match ingredients depending on what’s in your pantry or refrigerator.
I also have a new pork tenderloin recipe, and this time, it’s paired with mustardy red cabbage, leeks, and quick mashed potatoes. My disclaimer for the mashed potatoes: these are basic, no-fuss, milk-and-potato-water taters. If you have a mashed potato recipe that you love, use it here. I don’t bother with peeling, and I kept these relatively light by avoiding butter and cream and relying primarily on dried spices like garlic powder, paprika, and white pepper. Add as much decadence to these potatoes as you like, or keep it as simple as I did.
Finally, I put that fancy smoked olive oil I bought last week to good use in my easy tomato orzo recipe. This would be an amazing Monday recipe because it’s so darn easy to make.
I’m also resharing a recipe a beloved pumpkin black bean chili recipe that will be perfect for the colder evenings.
