Weekend Update
I can’t believe my PTO is already coming to an end. Truthfully, though, it wasn’t the best week of time off. I had to work off-and-on and we dealt with internet outages, so it seemed like a week where I was trudging through mud, unable to accomplish everything I wanted.
I did a nice Pilates flow yesterday, which is always rejuvenating! I also tried a new cafe in Baltimore called Mama Koko’s. I loved it so much I went back again! It’s so beautiful on the inside, and we also tried their sriracha chicken salad, which was delicious. Today, I took my Sunday hike, and now I’m watching an excruciating Bills game…eek!
I’m working on a chicken broth recipe and will make a basic chicken soup recipe for my site. Do you follow soups on Reddit? I’ve seen so many posts where people add a scoop of Stove Top stuffing to the soup when they eat it. People are going wild over it, so I had to buy a box of stuffing to try it out myself. I will let you know how it goes!
I also have a few recipes going to my recipe-testing program. I remade the slow cooker harissa chicken, which was outstanding. I’m really happy with this recipe and can’t wait to see how recipe testers enjoy it. I also reshot my Calabrian Chicken with Mozzarella recipe. I streamlined the recipe a bit, so I’ll have it tested again before I share the updated techniques with you all.
I also made a beautiful pumpkin tomato soup with tortellini, which I enjoyed! It’s a perfect autumnal take on tomato soup.

Recipes to inspire your meals this week
Pumpkin Cheesecake Overnight Oats
I’ve made these creamy, dreamy autumnal overnight oats many times, and I’ll make them for the rest of the season! As both recipe testers noted, they’re just perfect for fall! You can use vegan cream cheese, as I did, or dairy-based cream cheese, but they’ll be delicious no matter what.
Meatball Soup with Spinach
I received a wonderful comment on this recipe from a reader on Reddit, saying, “Thank you for the outstanding recipe! It's a keeper. Even my picky husband ate it, spinach and all!” I realized it was time to revisit the photo for this recipe, so I made it again yesterday. I tweaked the recipe very slightly to make it even easier (and just as delicious) by baking the meatballs instead of frying. Of course, frying is always an option, but I will take any opportunity not to deal with meatball splatters!
