Happy Sunday. Today, I have some new recipes and lots of reader favorites from last week!
Today is a bit of a lazy Sunday for me. I did all my cleaning yesterday, so today I am relaxing. I woke up, made my cappuccino, took a walk in the blistering heat, and took some photos with my film camera. Now I have a mumblecore movie on in the background, and I’m writing this newsletter to you.
Tonight, I’m going to make a chicken tortilla salad with watermelon margaritas. I rarely drink with dinner, but for some reason, I’ve been craving a margarita! It must be this heat 😜 I bought all the ingredients and can’t wait to make them today.
I’ve made this salad many times over the years. Most recently, I made it sans chicken, and it was a big hit with my family. It has a nice spicy, creamy dressing with crushed tortillas, charred corn, and black beans. I toss it with chopped Romaine lettuce, and it’s so perfect for a hot day! I can’t wait to share the recipe with you when it’s ready.
