Happy Sunday. Today, I have new recipes and reader faves to share with you.
Weekend Update
This weekend, I was in Rochester! It was a great time to relax and float around in the pool. We went to a restaurant in Webster, New York, situated right on Lake Ontario, so I enjoyed dressing up and having a cocktail on the water! For dinner, I had really good seared scallops. I usually don’t order scallops at restaurants because the portion is never commensurate with the price, but I was pleased to get more than 2 scallops at this restaurant! 😜
I’m on my way back home, feeling ready to come up with new recipes next week! For today’s newsletter, I have two new recipes from last week, plus lots of reader faves. Let’s dig in.
NEW RECIPES
Zucchini Shrimp Spaghetti
I actually developed this recipe over 7 (!!) years ago. Someone recently found it on Reddit and told me they made it and absolutely loved it. I realized I took it off my website for some reason, so I decided to reshoot it and share it again on the site! If you’re up to your ears in zucchini and tomatoes, this easy spaghetti is the perfect vehicle for them.
Lemon-Ricotta Nectarine Tart
This lemon-ricotta nectarine tart is the best of summer, baked into a flaky puff pastry with the perfect amount of decadence from the lemon-ricotta base.
READER FAVES
Baked Beef and Feta Meatballs
Thank you, Justine! I’m so happy you enjoyed this and that you’re looking forward to the leftovers! These meatballs are just as good (if not better!) the next day. Yum!
Vegan Roasted Poblano-Corn Chowder
Thank you, Annemarie! Great non-vegan alterations and additions! This recipe is so versatile, it can please everyone! I’m thrilled you enjoyed it — thank you!!
Tomato-Basil Shrimp and Zucchini
You can never have too many variations of shrimp, zucchini, and tomatoes, right? I’m so happy this was a hit for you!
Chicken with Corn Relish
Thank you for the five-star review, Hélène! This simple chicken with an extra flavorful corn relish has been a hit with readers this summer!
Spicy Cilantro-Lime Potatoes
Thank you so much, Sandee! I’m happy you were able to make some tweaks to accommodate allergies, and that this is a new fave in your household! And air-frying is such a great option for these flavorful taters! Thank you for the review!
TWO CHEESY IDEAS FOR THE WEEK
Cheesy Pork Cutlets
Thin pork cutlets are one of my favorite midweek meals, and these cheesy pork cutlets are the perfect way to use them. If you’re looking for an irresistible pork chop pasta recipe, make this your go-to.
Cheesy Chicken Quinoa
For days when you’re low on energy and inspiration, this cheesy chicken quinoa is here to save you to make, big on flavor, and perfect for a weeknight.
That’s it for this week! I hope everyone has a great week ahead, filled with lots of tasty food. If you decide to make one of my recipes, please drop a comment on the post to let me know how it turns out. I’d love to hear from you! Byeeeeeee! 💖 💖
