Happy Monday! Normally, I send this newsletter on Sundays, but I was feeling under the weather yesterday.
Turns out, I had COVID…after managing to avoid it for 5 years! It's a bit of a bummer because I had planned a beach trip for later in the week that I now have to cancel.
Since I wasn’t feeling well, I made a big batch of my favorite chicken noodle soup (recipe below). I also made an apple pie from an old cookbook, and it was amazing!
For now, I’ll be focused on trying to feel better, so I see many varieties of chicken soup in my future.
