Happy Thursday! Maybe it’s just me, but I feel like I am absolutely slogging through this week. But! I finally have a new recipe on the site plus a new reader favorite to inspire you as we wrap up this extra toasty week.
But first! I got a sneak preview of the photos from my photoshoot! I mentioned that this shoot was a gift to myself for reaching my weight loss goal and a way to end one chapter and begin the next. I received a few test shots yesterday, so don’t mind me as I change my profile picture everywhere ðŸ¤
This one is my favorite out of all of them! I got the dress from Sézane, and I feel like I’m living in a French castle or something. It’s so dreamy!
Just a few more. Overall, I had a really fun time seeing myself in a totally different light, and I love how dreamy they turned out. I have a hard time getting photos taken, but Gabby made me feel super comfortable and beautiful!
My hope is to do more in the future, and I’m currently taking suggestions for where I can find a giant tureen so she can photograph me in a giant pot of soup…I mean, really! How magical would that be?
New Recipe
Okay, enough silly talk…let’s dig into a new recipe.
My Favorite Chicken Dinner Recipe
I absolutely cannot stop eating this meal, especially the potatoes and zucchini. I’ve been eating some variation of this dinner on repeat for the past couple of weeks. I serve a simple protein with roasted potatoes and zucchini, along with a refreshing cucumber avocado salad. It takes just a little effort, but it’s absolutely delicious.
I mean, just look at the potatoes! They’re crisp on the outside and fluffy on the inside, and they work perfectly with zucchini.
I’ve made these potatoes with chicken, pork chops, wraps, and OF COURSE, I’ve served them with my favorite London broil recipe. Choose your own adventure when it comes to protein because I gotta be honest…the side is really the star of the show here.
