Midweek Meals
Reader faves and ideas from the archives 🌞
Happy Wednesday. Today, I have a few reader faves and seasonal ideas from the archives to keep you cooking this week.
Midweek Update
This week is zooming by! I can’t believe it’s already Wednesday. I’ve been cooking so much, too. I made an incredible shrimp and clam chowder (recipe will be shared in Friday Faves this week). It was so easy to make, but so flavorful.
Yesterday, I had a great meal. I made extra-thick bone-in pork chops seasoned with salt, pepper, and Aleppo pepper and served with plenty of sautéed onions. I paired it with roasted broccoli and a harissa cheese sauce, and my Never Fail Rolls, except I didn’t feel like making rolls, so I just dumped all my dough into the pan and chucked it into my oven. After it finished baking, I just cut them into squares. Of course, I’ll be making a recipe for the pork chops. It’s the best way to eat them, and that little bit of heat from Aleppo pepper really takes them over the top.
For tonight, I’m making super basic turkey burgers, and since I have cheese leftover, I might make my harissa mac and cheese. On Friday, I’m making shredded beef taco salads. Yum. I can’t wait!
Let’s get into some recipes to keep you cooking the rest of the week.
